Vanilla French Toast with Orange


Method

Step 1
Using a sharp knife, split Vanilla Bean Pods lengthways and scrape seeds out with tip of knife. Whisk together the eggs, mascarpone, cream, vanilla seeds, sugar, zest and cinnamon in a shallow bowl.

Step 2
Place a large, non stick frying pan over a medium heat, and add a tablespoon of butter.

Step 3
When the butter has melted, dip two or three slices at a time into the egg mixture on each side, and place into the hot pan. Add as many slices as will fit comfortably in one layer.

Step 4
Cook each piece until lightly browned on both sides, set aside and keep warm. Repeat with remaining butter and brioche.

Step 5
Serve toast dusted with Taylor & Colledge Vanilla Bean or Cinnamon Dusting Sugar.

0.26 oz. (7.5g) finely grated orange zest
0.26 oz. (7.5g) cinnamon
1 loaf sugared or plain brioche, thickly sliced into 12
2.6 oz. (75g) butter
