No Bake Lemon & Coconut Slice


Method

Step 1
In a small saucepan heat butter and sweetened condensed milk on a gentle heat until butter is melted and mixture is combined.

Step 2
Combine coconut and cookies, mix well. Add condensed milk mixture, Lemon Extract Paste and mix well until well combined.

Step 3
Hand press firmly into a greased 6″x10″ slice tin. Allow to set in fridge for an hour.

Step 4
To prepare icing, stir together confectioners’ sugar, melted butter and Lemon Extract Paste. Add a little warm water to achieve a thick, smooth paste.

Step 5
Remove set slice from fridge, ice with lemon icing and sprinkle with coconut. Allow to set for a couple of hours, slice into pieces to serve.

SLICE
1 stick + 1 tbsp (125g) unsalted butter
3 oz (90g) desiccated coconut
8 oz (250g) milk arrowroot or butter cookies, finely crushed
1 tsp Taylor & Colledge Lemon Extract Paste
4 oz sweetened condensed milk


ICING
8 oz (225g) confectioners’ sugar
1 1/2 tbsp (20g) unsalted butter, melted
1 tsp Taylor & Colledge Lemon Extract Paste (adjust to your taste)
3 tbsp desiccated coconut
